Ingredients

Sweet Potatoes
  • 5-6 medium sweet potatoes, washed
  • 3 large eggs, room temperature
  • 2 tablespoons light brown sugar, packed
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon cayenne pepper
Streusel Topping
  • 1 cup (125 g) all-purpose flour
  • ½ cup (100 g) light brown sugar, packed
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • 1 cup (109 g) pecans, roughly chopped, divided
  • ½ cup (1 stick / 113 g) unsalted butter, melted

Instructions

  1. Preheat oven to 375°F. Line a large baking sheet with parchment paper. Set aside.
  2. Using a fork, prick the sweet potato a few times on each side. Place sweet potatoes on the lined baking sheet. Bake until fork-tender (about 70-80 minutes). Depending on the size of the sweet potatoes, cooking times may vary.
  3. Allow the potatoes to cool for 15-20 minutes, or until they are cool enough to handle.
  4. When cool enough, use a sharp knife to cut each potato in half, horizontally. Scoop out the insides of each sweet potato, discarding the skins. Place the cooked sweet potatoes into the bowl of a food processor (about 4½ cups potatoes).
  5. Add eggs, brown sugar, vanilla, salt, pepper, nutmeg, cinnamon, and cayenne. Blend until smooth. (You could also use a hand mixer or a blender.)
  6. Spray an 11x7-inch* baking dish with cooking spray. Pour the potato mixture into the prepared baking dish. Set aside while you prepare the streusel topping.
Streusel Topping
  1. In a medium bowl, whisk together the flour, brown sugar, cinnamon, salt, and ¾ cup of pecans.
  2. Add the melted butter to the flour mixture. Mix with a fork until the mixture is combined.
  3. Top the sweet potato mixture with the streusel topping. Sprinkle the remaining pecans evenly over the top of the entire dish. Bake for 25-30 minutes, or until golden brown.

Notes

  • *If you use a 9x13-inch baking dish the filling layer will just be slightly thinner.
