Sweet Tomato Chutney
Sweet Tomato Chutney is a slow-cooked condiment combining chopped tomatoes, onions, and hot chili peppers simmered with brown sugar and red wine vinegar until thickened to a jam-like consistency. Finished with fresh basil and lemon juice, it offers a balance of sweet, tangy, and spicy flavors that complement savory dishes.
Ingredients
- 1 cup brown sugar
- ½ cup red wine vinegar
- 8 large tomato chopped
- 1 onion chopped
- 2 red hot chili peppers minced
- 10 basil chopped, leaves
- lemon juice of 1
Instructions
- Boil the sugar and vinegar until the sugar is dissolved.
- Add the tomatoes, onion, and chils and cook until it gets a jam-like consistency, around 45 minutes.
- Remove from heat and add the basil and lemon juice.
- Serve chunky or use an immersion blender or other mixer to smooth it out a bit.
Notes
- The chutney can be blended with an immersion blender after cooking to achieve a smoother, paste-like texture.
- Cooking down the ingredients for about 45 minutes allows the sauce to thicken to jam consistency.
- Fresh basil and lemon juice are added at the end off the heat to preserve their brightness.
