Sweet Tomato Chutney

Sweet Tomato Chutney is a slow-cooked condiment combining chopped tomatoes, onions, and hot chili peppers simmered with brown sugar and red wine vinegar until thickened to a jam-like consistency. Finished with fresh basil and lemon juice, it offers a balance of sweet, tangy, and spicy flavors that complement savory dishes.

Description

The recipe involves dissolving brown sugar in red wine vinegar over boiling heat, then adding large chopped tomatoes, onions, and minced hot chili peppers. This mixture is cooked down for approximately 45 minutes until the chutney becomes thick and jam-like, concentrating the flavors. After removing from heat, fresh chopped basil leaves and lemon juice are stirred in to brighten the taste and add herbal freshness.

The resulting chutney is chunky with a balance of sweetness from the sugar and acidity from the vinegar and lemon. The chili adds heat to the mix, providing a spicy undertone that can be adjusted based on pepper quantity. This chutney serves as an accompaniment to meats, cheeses, or sandwiches, enhancing dishes with its rich, layered flavor.

For a smoother texture, use an immersion blender after cooking to pulse the chutney to your preferred consistency. This flexibility allows for personal preference in texture without affecting the overall flavor profile.
