Sweet Vermicelli (Meethi Seviyan)

Sweet Vermicelli, or Meethi Seviyan, is a dessert made by roasting vermicelli in ghee with nuts and raisins, then cooking it with water, sugar, cardamom, and saffron. This creates a fragrant, sweet, and lightly spiced dish with tender vermicelli strands and crunchy nut textures. Its richness and warm spices make it suitable for special occasions or festive meals.

Ingredients

  • 2 tablespoon ghee or unsalted butter
  • 2 tablespoon cashew Sliced or broken into small pieces
  • 2 tablespoon almond Sliced or broken into small pieces
  • 1 tablespoon raisins
  • 1 cup vermicelli see notes, roasted
  • 1 cup water (2 cups for stovetop method)
  • 1/3 cup sugar
  • 1/2 teaspoon cardamom powder aka Elaichi
  • 4-5 trands saffron aka Kesar
  • pistachio sliced, to garnish (optional

Instructions

Instant Pot Method
    Cup of Yum
  1. Start the instant pot in SAUTE mode and heat ghee in it.  
  2. Add the nuts and saute for 30 seconds. Then add raisins and saute for another 30 seconds. Then add roasted vermicelli and saute for a minute.
  3. Stir in the remaining ingredients - water, cardamom, sugar and saffron. Press CANCEL and close the instant pot lid with vent in sealing position.
  4. Press MANUAL or pressure cook mode and set it for 1 minute at high pressure.  
  5. When the instant pot beeps, do 5 minute natural pressure release, which means release pressure 5 minutes after the instant pot beeps.
  6. Sweet Seviyan are ready to be served. Garnish with sliced pistachios.  
Stovetop Method
  1. Heat ghee in a heavy bottom pan on medium heat.
  2. Add the nuts and saute for 30 seconds. Then add raisins and saute for another 30 seconds. Then add roasted vermicelli and saute for a minute.
  3. Stir in the remaining ingredients - water, cardamom, sugar and saffron.  
  4. Cook on medium heat, stirring frequently. The seviyan will absorb the water in about 6-8 minutes.
  5. Serve Meethi Seviyan garnished with sliced pistachios.

Notes

  • If you don’t have roasted vermicelli, roast the vermicelli in ghee for 3-4 minutes before adding nuts.
  • Sweet Seviyan can be made with half milk and half water for a richer texture instead of only water.
  • Grinding whole cardamom pods fresh provides the best flavor for the cardamom powder.
