Description
Sweet Vermicelli (Meethi Seviyan) combines roasted fine vermicelli with ghee, cashews, almonds, and raisins that are sautéed first to add a toasty flavor and crunchy texture. The mixture is then simmered with sugar, cardamom powder, saffron, and water or a mix of water and milk to create a sweet, aromatic pudding-like dish. The saffron adds a gentle floral note and golden hue, while cardamom imparts warm spice.
The texture balances soft vermicelli strands with the richness of ghee and the bite of nuts and chewy raisins. Cooking methods include an Instant Pot or stovetop; the Instant Pot shortens cooking time with pressure, while the stovetop requires frequent stirring to avoid burning.
This dessert is often garnished with sliced pistachios for color and added nutty flavor. It is common in South Asian cultures, enjoyed during festivals or as a special treat. Using roasted vermicelli intensifies the flavor, but unroasted may be roasted briefly before use.
Cardamom powder is preferably freshly ground from whole pods. Some variations incorporate milk for creaminess instead of just water.
Ingredients
- 2 tablespoon ghee or unsalted butter
- 2 tablespoon cashew Sliced or broken into small pieces
- 2 tablespoon almond Sliced or broken into small pieces
- 1 tablespoon raisins
- 1 cup vermicelli see notes, roasted
- 1 cup water (2 cups for stovetop method)
- 1/3 cup sugar
- 1/2 teaspoon cardamom powder aka Elaichi
- 4-5 trands saffron aka Kesar
- pistachio sliced, to garnish (optional
Instructions
Instant Pot Method
- Start the instant pot in SAUTE mode and heat ghee in it.
- Add the nuts and saute for 30 seconds. Then add raisins and saute for another 30 seconds. Then add roasted vermicelli and saute for a minute.
- Stir in the remaining ingredients - water, cardamom, sugar and saffron. Press CANCEL and close the instant pot lid with vent in sealing position.
- Press MANUAL or pressure cook mode and set it for 1 minute at high pressure.
- When the instant pot beeps, do 5 minute natural pressure release, which means release pressure 5 minutes after the instant pot beeps.
- Sweet Seviyan are ready to be served. Garnish with sliced pistachios.
Stovetop Method
- Heat ghee in a heavy bottom pan on medium heat.
- Add the nuts and saute for 30 seconds. Then add raisins and saute for another 30 seconds. Then add roasted vermicelli and saute for a minute.
- Stir in the remaining ingredients - water, cardamom, sugar and saffron.
- Cook on medium heat, stirring frequently. The seviyan will absorb the water in about 6-8 minutes.
- Serve Meethi Seviyan garnished with sliced pistachios.
Notes
- If you don’t have roasted vermicelli, roast the vermicelli in ghee for 3-4 minutes before adding nuts.
- Sweet Seviyan can be made with half milk and half water for a richer texture instead of only water.
- Grinding whole cardamom pods fresh provides the best flavor for the cardamom powder.
