Swoodles (Sweet Potato Noodles)

Making your food into spirals just makes it that more FUN and enjoyable to eat! I hope you will swoon over the swoodles like I am!

Ingredients

  • 1 large sweet potato large
  • 1 Tbsp. avocado oil
  • 1 Tbsp. toasted sesame oil
  • 2 Tbsp. apple cider vinegar
  • 2 tsp. honey (or maple syrup)
  • pinch crushed red pepper flakes
  • 1/4 tsp. salt
  • 1 tsp. Liquid Aminos (or soy sauce)
  • 1 tsp. mirin
  • 1 green onion diced
  • 1 Tbsp. sesame seeds

Instructions

  1. Cook the sweet potato in the oven at 425°F for 10-15 minutes (will not be fully cooked at this point).
  2. While the potato cools off a little, make the dressing!
  3. In a small bowl whisk together the liquid aminos/soy sauce, mirin, sesame oil, vinegar, honey, red pepper flakes, and salt.
  4. Set the dressing aside.
  5. Spiralize the sweet potato into noodles.
  6. In a medium sauté pan heat the noodles with avocado oil for about 5 minutes (I like them slightly crunchy but cook longer, 10-15 min, if desired).
  7. Toss in the dressing, green onions, and sesame seeds.
  8. Serve warm or cold.
  9. Store in an airtight container in the fridge for up 5 days.

Notes

  • Note: if you don't have Mirin, rice vinegar with a little sugar will do the trick! Or, opt out of the sugar since these noodles are already sweet with the honey and ACV.*Liquid aminos is a soy sauce alternative.
  • What to use if you don't own a Spiralizer attachment or appliance:
  • vegetable peeler
  • paring knife
  • small mandolin slicer
  • dual julienne peeler & vegetable peeler
