Swordfish Burgers

These swordfish burgers with lemon vinaigrette are easy to make and are ready in less than 20 minutes. Perfect for lunch or dinner and super healthy.

Ingredients

  • 1.5 lbs 24 oz swordfish steaks, skin removed
  • 1 lemon (juiced)
  • 3 tbsp chopped chives
  • 8 tsp extra virgin olive oil
  • 2 garlic cloves
  • salt and fresh pepper
  • 1 shallot
  • 1/4 cup breadcrumbs
  • lemon zest
  • salt and fresh pepper
  • Oil spray
  • mixed greens or chopped romaine

Instructions

  1. Cut fish into large chunks, and put about 1/4 of the fish into a food processor along with garlic and shallots.
  2. Pulse until it becomes almost pasty.
  3. Place into a medium bowl.
  4. Place the remaining fish into food processor and pulse on and off until chopped.
  5. Combine with the rest of the fish in the bowl and add chives, lemon zest, breadcrumbs, salt and pepper.
  6. Mix well and form into 4 patties.
  7. In a large non-stick skillet, spray a little oil and heat on medium-high.
  8. Add fish and cook about 4 minutes on each side.
  9. To BBQ: Grill 4-6 inches above the fire on a lightly oiled grill rack.
  10. Grill on medium flame, about 4 minutes each side.
  11. Whisk vinaigrette ingredients in a small bowl.
  12. Serve fish burgers over a bed of greens and drizzle with lemon vinaigrette.
