Tabouleh
Tabouleh is a fresh, herb-forward salad combining chopped tomatoes, parsley, cracked wheat, onions, lemon juice, and olive oil. The cracked wheat softens by sitting on the tomatoes before mixing with the other ingredients, allowing the salad to develop a light, bright flavor with a slight chew from the wheat and fresh aromatics. It pairs well as a side dish or accompaniment to grilled meats or breads.
Ingredients
- 2 Roma tomato
- 1/4 cup cracked wheat
- 4 bunches flat-leaf parsley finely chopped
- 1 onion finely chopped
- 2 lemon juice only, plural
- 3-4 tablespoons olive oil extra virgin
- black pepper freshly ground
