Tabouleh is a fresh, herb-forward salad combining chopped tomatoes, parsley, cracked wheat, onions, lemon juice, and olive oil. Description

Tabouleh features finely chopped Roma tomatoes spread out to allow their juices to gently soften the cracked wheat. The cracked wheat absorbs moisture over 20 minutes, softening its texture. Finely chopped onions are seasoned separately before combining with the tomatoes, wheat, lemon juice, parsley, and olive oil. The ingredients are tossed together then left to rest another 15 minutes, allowing the flavors to meld.

The combination yields a salad with fresh acidity from lemon, herbal notes from parsley, mild bite from onions, and the distinctive texture of softened cracked wheat. Black pepper adds subtle heat to balance the flavors. Ingredients

  • 2 Roma tomato
  • 1/4 cup cracked wheat
  • 4 bunches flat-leaf parsley finely chopped
  • 1 onion finely chopped
  • 2 lemon juice only, plural
  • 3-4 tablespoons olive oil extra virgin
  • black pepper freshly ground

Instructions

  1. Finely chop the tomatoes and spread out on a plate.
  2. Spread the cracked wheat over the chopped tomato and let sit for 20 minutes.
  3. Cover the chopped onion with salt & pepper.
  4. Once the wheat has sat for 20 minutes combine all ingredients and the lemon juice.
  5. Toss and let sit for another 15 minutes.
  6. Serve with any barbecued meat and Lebanese bread or on baked potato with a little dollop of sour cream.
