Taco Salad with Doritos & Catalina Dressing

This isn't your typical Taco Salad recipe. We're taking things up a few notches by adding Doritos and a sweet Catalina Salad Dressing. Ready in less than 30 minutes, your family will DEVOUR this!

Ingredients

  • 1 tbsp avocado oil or other neutral oil of choice
  • 1/2 cup onion finely diced
  • 1 lb ground beef I used 80/20
  • 3 1/2 tbsp homemade taco seasoning or 1 packet of store-bought
  • 1/2 cup water
  • 1/2 cup Catalina dressing divided
  • 10 cups iceberg lettuce shredded (or lettuce of choice)
  • 15 oz black beans drained and rinsed (or pinto, chili, white, etc.)
  • 6 oz Colby jack cheese shredded (or cheddar, mexican blend, etc.)
  • 5 oz Doritos crushed
optional toppings
  • tomatoes diced
  • onion green, white or red, diced
  • avocado sliced, or guacamole
  • sour cream
  • more Catalina Dressing or salsa
  • black olives
  • cilantro fresh, chopped

Instructions

  1. Heat oil in large skillet over medium-high heat. Add diced onion and cook for a few minutes until transluscent.
  2. Add ground beef and cook until browned, breaking up meat into smaller pieces as you go.
  3. Reduce heat to a medium-low and tip pan to one side to allow grease to gather and dab with a paper towel to remove most of the grease.
  4. Add taco seasoning and water. Stir and simmer for about 3 minutes.
  5. Add 1/2 cup of the Catalina dressing and stir to combine. Turn heat off.
  6. In a large salad bowl, add lettuce, cheese, the remainder of the Catalina dressing, meat mixture, black beans, and doritos. Toss to combine.
  7. Serve in individual bowls and garnish with tomatoes, green or red onion, avocado, sour cream cilantro, black olives or any desired toppings.
  8. Eat at room temperature or chilled.
