Taco Salad with Doritos & Catalina Dressing

This isn't your typical Taco Salad recipe. We're taking things up a few notches by adding Doritos and a sweet Catalina Salad Dressing. Ready in less than 30 minutes, your family will DEVOUR this!

Ingredients
- 1 tbsp avocado oil or other neutral oil of choice
- 1/2 cup onion finely diced
- 1 lb ground beef I used 80/20
- 3 1/2 tbsp homemade taco seasoning or 1 packet of store-bought
- 1/2 cup water
- 1/2 cup Catalina dressing divided
- 10 cups iceberg lettuce shredded (or lettuce of choice)
- 15 oz black beans drained and rinsed (or pinto, chili, white, etc.)
- 6 oz Colby jack cheese shredded (or cheddar, mexican blend, etc.)
- 5 oz Doritos crushed
optional toppings
- tomatoes diced
- onion green, white or red, diced
- avocado sliced, or guacamole
- sour cream
- more Catalina Dressing or salsa
- black olives
- cilantro fresh, chopped

Instructions
- Heat oil in large skillet over medium-high heat. Add diced onion and cook for a few minutes until transluscent.
- Add ground beef and cook until browned, breaking up meat into smaller pieces as you go.
- Reduce heat to a medium-low and tip pan to one side to allow grease to gather and dab with a paper towel to remove most of the grease.
- Add taco seasoning and water. Stir and simmer for about 3 minutes.
- Add 1/2 cup of the Catalina dressing and stir to combine. Turn heat off.
- In a large salad bowl, add lettuce, cheese, the remainder of the Catalina dressing, meat mixture, black beans, and doritos. Toss to combine.
- Serve in individual bowls and garnish with tomatoes, green or red onion, avocado, sour cream cilantro, black olives or any desired toppings.
- Eat at room temperature or chilled.
