Ingredients
- 1 batch Easy Taco Meat
- 3 haas avocados
- ½ cup cherry tomatoes chopped
- ½ cup shredded cheddar cheese
- ½ cup shredded lettuce
- Optional: sour cream for the topping
Instructions
- Make a batch of my Easy Taco Meat and prepare the rest of the ingredients while the meat is cooking.
- Cut each avocado in half and remove part of the flesh. You can save it to use in guacamole or even just drizzle some olive oil and a sprinkle of everything bagel seasoning over the top.
- Take each avocado half and fill it with the taco meat. Top with the tomatoes, cheddar cheese, shredded lettuce and the a dollop of the optional sour cream.
- Serve immediately and store leftovers in an airtight container in the fridge for a few days.
