Ingredients
- 1 pound lean ground beef
- 3 tablespoons taco seasoning mix or a 1 ounce packet
- 15 ounces black beans canned, drained and rinsed well
- 1 cup corn kernels frozen, but could use canned if drained well or fresh
- 1 cup mild salsa
- 2 cups cheddar cheese divided, shredded
- 32 ounces frozen tater tots

Instructions
- Preheat the oven to 375°F. Spray a 9x13-inch baking dish with cooking spray.
- Place a large skillet over medium heat. I've used a cast iron skillet, but you can use any large skillet. Add the ground beef until browned and cooked through, about 8-10 minutes. Break up the meat with a spatula as it cooks.
- Drain any excess fat from the pan. Add the taco seasoning mix, black beans, corn, salsa, and 1 cup of the shredded cheddar cheese to the meat mixture, stirring well until heated through.
- Transfer the beef mixture into the prepared baking dish, spreading it out evenly over the bottom of the pan.
- Set the frozen tater tots in a single layer in rows over the beef mixture, covering it completely.
- Place the casserole in the oven. Bake for 20-25 minutes or until the tater tots are crispy brown. Remove the casserole from the oven, then sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the tater tots. Return the casserole to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
- Remove the casserole from the oven. Allow it to cool for 5-10 minutes before serving. Top with extra toppings like shredded lettuce, diced tomatoes, sliced black olives, and a dollop of sour cream, if desired. Enjoy!
