Ingredients

  • 12 corn tortillas
  • 1 pineapple 1/2 thick, peeled, thickly sliced, fresh
  • 3 cups al pastor meat thinly sliced
  • 1 red onion peeled, thinly sliced
  • 1 cup cilantro roughly minced, fresh
  • lime wedges for garnish

Instructions

  1. Marinate and roast the al pastor meat.
  2. Heat the corn tortillas over a grill, open flame, or in a large pan over medium heat for 20 to 30 seconds per side or until they are warm and steaming. Cover them with a towel to keep them warm.
  3. Cook the sliced pineapple on a pan under the broiler on high for 3 to 4 minutes per side or directly on a hot grill for 2 to 3 minutes per side or until lightly charred. Medium dice them.
  4. Thinly slice the cooked al pastor meat onto a heated corn tortilla. You can use two shells if you’d like.
  5. Next, generously garnish with diced red onions, cilantro, and pineapple. Repeat the process until all the ingredients are used evenly.
  6. Serve the tacos al pastor with lime slices.

Notes

  • Assemble the tacos right before serving to ensure all components stay warm and fresh.
  • Store cooked meat and other ingredients separately in the refrigerator for up to 5 days; these do not freeze well.
  • Reheat al pastor meat gently with a little water in a pan over low heat to keep it tender.
  • Fresh uncooked pineapple can be used as a topping if preferred.
  • Flour tortillas are an alternative but corn tortillas are traditional and preferred.
  • If tortillas tear easily, use two per taco for better support.
