Tacos Al Pastor Recipe

The Tacos Al Pastor Recipe features thinly sliced al pastor meat served on warm corn tortillas, topped with charred pineapple, fresh red onions, and cilantro. The combination offers a balance of savory, sweet, and fresh elements. Grilling the pineapple adds a light char that complements the meat, while lime wedges provide a tangy finish. This recipe suits those aiming to recreate a classic Mexican street taco experience at home with straightforward grilling and assembly steps.

Description

Tacos Al Pastor Recipe centers on marinated and roasted al pastor meat served hot on corn tortillas. The recipe uses fresh pineapple slices cooked until lightly charred either under a broiler or on a grill, which are then diced and added as a topping with thinly sliced red onions and roughly minced cilantro. Heating the corn tortillas until steaming softens them, making them pliable for folding. The assembled tacos are garnished with lime wedges to squeeze over before eating, enhancing the overall flavor profile with a citrus note.

The tacos combine savory and slightly smoky meat with sweet and tangy pineapple, fresh aromatic herbs, and the mild pungency of onions, resulting in layered tastes and textures. Preparation involves heating components separately and assembling immediately to serve warm. Using two tortillas per taco is optional for sturdiness.

To maintain freshness if not serving immediately, keep the cooked meat warm and other ingredients stored separately up to 30 minutes before serving. Stored covered in the refrigerator, the components last up to 5 days but are best consumed fresh. Reheat the meat gently with a small amount of water to preserve tenderness.

Ingredients

Servings
  • 12 corn tortillas
  • 1 pineapple 1/2 thick, peeled, thickly sliced, fresh
  • 3 cups al pastor meat thinly sliced
  • 1 red onion peeled, thinly sliced
  • 1 cup cilantro roughly minced, fresh
  • lime wedges for garnish

Instructions

  1. Marinate and roast the al pastor meat.
  2. Heat the corn tortillas over a grill, open flame, or in a large pan over medium heat for 20 to 30 seconds per side or until they are warm and steaming. Cover them with a towel to keep them warm.
  3. Cook the sliced pineapple on a pan under the broiler on high for 3 to 4 minutes per side or directly on a hot grill for 2 to 3 minutes per side or until lightly charred. Medium dice them.
  4. Thinly slice the cooked al pastor meat onto a heated corn tortilla. You can use two shells if you’d like.
  5. Next, generously garnish with diced red onions, cilantro, and pineapple. Repeat the process until all the ingredients are used evenly.
  6. Serve the tacos al pastor with lime slices.

Notes

  • Assemble the tacos right before serving to ensure all components stay warm and fresh.
  • Store cooked meat and other ingredients separately in the refrigerator for up to 5 days; these do not freeze well.
  • Reheat al pastor meat gently with a little water in a pan over low heat to keep it tender.
  • Fresh uncooked pineapple can be used as a topping if preferred.
  • Flour tortillas are an alternative but corn tortillas are traditional and preferred.
  • If tortillas tear easily, use two per taco for better support.
