Ingredients
- 1 lb beef (or lamb or chicken cutlets)
- 1 bunch flat parsley , finely chopped
- 2 onions , finely chopped
- 8 eggs , beaten
- 10 tablespoons stale bread , mixed
- 5 oz. grated cheese (e.g. mozzarella)
- 7 tablespoons olive oil
- ½ teaspoon Turmeric
- 2 teaspoons tomato paste
- salt
- pepper
- 5 tablespoons unsalted butter (for the mold)

Instructions
- Cut the meat into small cubes or thin slices.
- In a pressure cooker, heat 5 tablespoons olive oil over medium heat and brown the meat (or chicken).
- Add turmeric and tomato paste. Season with salt and pepper.
- Add enough boiling water to cover the meat, stir well, lock the pressure cooker and simmer on low/medium heat for 30 minutes.
- Open the pressure cooker and, if there is still a lot of liquid, reduce the sauce by raising the heat. There must be very little sauce left and it must be thick.
- While the meat is cooking, heat the remaining 2 tablespoons of olive oil in a separate pan over medium heat.
- Sauté the onion and parsley for a few minutes.
- Pour the contents of the pressure cooker into a large bowl, add the grated cheese, the eggs, the stale mixed bread and the mixture of parsley and onions.
- Mix well and transfer this mixture to a buttered baking dish.
- Bake in a preheated oven at 350 F (180˚C) for 30 to 40 minutes. The top must be golden.
- Serve the tajine maadnous hot or lukewarm.
