Tajine Maadnous

Tajine Maadnous is a delicious Tunisian egg cake made of meat, cheese, bread crumbs, onion, parsley, tomato, and turmeric, that is similar to an Italian frittata.

Ingredients

  • 1 lb beef (or lamb or chicken cutlets)
  • 1 bunch flat parsley , finely chopped
  • 2 onions , finely chopped
  • 8 eggs , beaten
  • 10 tablespoons stale bread , mixed
  • 5 oz. grated cheese (e.g. mozzarella)
  • 7 tablespoons olive oil
  • ½ teaspoon Turmeric
  • 2 teaspoons tomato paste
  • salt
  • pepper
  • 5 tablespoons unsalted butter (for the mold)

Instructions

  1. Cut the meat into small cubes or thin slices.
  2. In a pressure cooker, heat 5 tablespoons olive oil over medium heat and brown the meat (or chicken).
  3. Add turmeric and tomato paste. Season with salt and pepper.
  4. Add enough boiling water to cover the meat, stir well, lock the pressure cooker and simmer on low/medium heat for 30 minutes.
  5. Open the pressure cooker and, if there is still a lot of liquid, reduce the sauce by raising the heat. There must be very little sauce left and it must be thick.
  6. While the meat is cooking, heat the remaining 2 tablespoons of olive oil in a separate pan over medium heat.
  7. Sauté the onion and parsley for a few minutes.
  8. Pour the contents of the pressure cooker into a large bowl, add the grated cheese, the eggs, the stale mixed bread and the mixture of parsley and onions.
  9. Mix well and transfer this mixture to a buttered baking dish.
  10. Bake in a preheated oven at 350 F (180˚C) for 30 to 40 minutes. The top must be golden.
  11. Serve the tajine maadnous hot or lukewarm.
