Tamago Kake Gohan is a Japanese comfort dish of hot cooked brown rice topped with raw eggs stirred in to create a creamy texture. It uses tamari for seasoning and includes scallions and sesame seeds for garnish. Additional toppings such as nori, pickles, or avocado can personalize the bowl.

Ingredients
- extra-virgin olive oil for drizzling
- 2 to 3 cups brown rice cooked, very hot
- 2 egg
- tamari splashes
- 1 scallions finely chopped
- sesame seeds for sprinkling
optional toppings:
- egg extra yolks
- nori thinly sliced
- Japanese pickles or pickled ginger
- microgreens
- rice vinegar or umeboshi vinegar, splash
- avocado slices
- broccoli roasted
Instructions
- Scoop the cooked brown rice among two bowls. While the rice is piping hot, add 1 egg per bowl along with splashes of tamari, and stir vigorously so that the egg gently cooks as it coats the rice, making the rice a creamy consistency.
- Top each bowl with scallions, sesame seeds, and desired additional toppings. Serve with tamari on the side, for seasoning.
