Tamarind margarita

This tamarind take on the classic, has extra sweet tart flavor, and is both refreshing and easy.

Ingredients

  • 1 teaspoon lime chili seasoning approx - for rim (eg tajin)
  • 1 lice lime
  • 1 ½ fl oz tequila
  • 1 ½ fl oz tamarind paste (ideally freshly made, see notes)
  • ¾ fl oz lime juice

Instructions

  1. Sprinkle some chili lime seasoning on a small plate in a circle around the same size as the rim of your glass.
  2. Rub the top rim of the glass you will serve the drink in with the slice of lime then dip in the chili lime seasoning so that you have a good rim of the seasoning.
  3. Place the tequila, tamarind and lime juice in a cocktail shaker with ice. Shake a minute to chill and mix.
  4. Add ice to the rimmed glass then strain the drink into the glass.

Notes

  • If you don't have chili lime seasoning, you can use a mix of chili powder and salt. 
  • I'd recommend using fresh pods and making your own tamarind paste if at all possible. To make your own paste, peel and remove thick strings from pods, soak the inner flesh in boiling water a few minutes then squeeze to remove seeds and loosen flesh. Strain the mixture to remove any tough fibers etc, then gently simmer the mixture around five minutes to thicken slightly and which also helps preserve it. Refrigerate for up to a few days until needed.
  • This recipe assumes you use sweet tamarind which has a slightly sweeter taste. As a result, you don't really need additional sweetener. However if you use a block of tamarind and rehydrate with more water, or sour tamarind, you may want to use a little less (around ⅔ of recipe ie 1oz) and add a little simple syrup or agave to sweeten to taste.
