Ingredients

  • ¼ cup red wine vinegar
  • 2 Tablespoons Dijon mustard see note
  • 1 ½ teaspoons mustard seed optional
  • 2 cloves garlic minced or pressed
  • ¼ teaspoon salt to taste, fine sea salt
  • ¼ teaspoon black pepper to taste, freshly ground
  • ¾ cup extra virgin olive oil

Instructions

  1. Add all the ingredients to a jar and shake really well until emulsified. Be sure to taste test for salt levels. Or, whisk together in a bowl.
  2. Toss on a salad immediately before serving. Store leftover dressing in an airtight container in the fridge for up to 1 week.

Notes

  • Reduce Dijon mustard to 1 tablespoon for a milder vinaigrette taste.
  • Optional add-ins: honey for sweetness, dried herbs, fresh parsley, or shallot for varied flavors.
  • Store extra dressing in an airtight container refrigerated up to one week.
