Tangy & Creamy Red Wine Vinaigrette
Description
The vinaigrette combines red wine vinegar and Dijon mustard as the acidic and emulsifying bases. Minced garlic and optional mustard seeds provide pungency and a subtle crunch. The extra virgin olive oil rounds out the dressing with a smooth, rich texture once shaken or whisked to emulsify the ingredients.
Its tangy and creamy profile enhances leafy greens and vegetable salads without overwhelming other flavors. Salt and freshly ground black pepper are added to taste for balance. The dressing is intended to be made fresh and used immediately on salads.
Leftover vinaigrette can be stored in an airtight container in the refrigerator for up to one week, allowing flavors to meld further. Variations include reducing Dijon mustard or adding honey or herbs for sweetness and complexity.
Ingredients
- ¼ cup red wine vinegar
- 2 Tablespoons Dijon mustard see note
- 1 ½ teaspoons mustard seed optional
- 2 cloves garlic minced or pressed
- ¼ teaspoon salt to taste, fine sea salt
- ¼ teaspoon black pepper to taste, freshly ground
- ¾ cup extra virgin olive oil
Instructions
- Add all the ingredients to a jar and shake really well until emulsified. Be sure to taste test for salt levels. Or, whisk together in a bowl.
- Toss on a salad immediately before serving. Store leftover dressing in an airtight container in the fridge for up to 1 week.

- Reduce Dijon mustard to 1 tablespoon for a milder vinaigrette taste.
