Tangy Salmon Sheet Pan Dinner

This delicious & easy Salmon Sheet Pan Dinner recipe is made in 30 minutes or less and has a sweet tangy sauce. Served with potatoes, asparagus, & tomatoes.

Ingredients

  • 4 salmon filets
  • 2 cups small potatoes split in half
  • 4 oz asparagus trimmed
  • 1 cup cherry tomatoes
  • 2 tablespoons chopped thyme
  • olive oil
  • salt + pepper
  • 1 Teaspoon fresh lime juice
For Sauce
  • 1/4 cup jam
  • 1 Tablespoon soy sauce
  • 1 Tablespoon fresh lime juice
  • Pinch of cayenne pepper more if you like it spicy

Instructions

  1. Preheat oven to 400 degrees Fahrenheit
  2. Grease a sheet pan
  3. Place potatoes in a sheet pan, add 2 tablespoons of olive oil, 1 teaspoon thyme, salt, and pepper. Toss to coat
  4. Bake for 10 minutes
  5. Remove from oven and move potatoes over to one side
  6. Place salmon fillets in the middle, skin side down. Sprinkle olive oil, salt, pepper and lime juice on top
  7. Toss the tomatoes and asparagus with olive oil, salt, pepper, and thyme. Place around the salmon
  8. Bake for 15-17 minutes
  9. Meanwhile, prepare the sauce by placing all the ingredients in a bowl and mixing with a fork
  10. Remove sheet pan from the oven and spoon sauce all over the salmon
  11. Broil for 2-3 minutes or until the sauce is bubbly
  12. Remove from oven and enjoy!
