Tantanmen 坦々麺

Tantanmen is a hearty noodle soup featuring spiced pork mince cooked in a savory-sweet miso sauce combined with a broth made from soy milk, sesame paste, Japanese chili oil, and other seasonings. Ingredients

Pork mince
  • 250 g pork mince
  • 1 tbsp sake
  • 1 ½ tbsp soy sauce
  • 1 ½ tbsp sweet miso paste tenmenjan Chinese
soup
  • 1 tbsp or 10g finely chopped Zasai
  • 5 cm shallots white part, finely chopped, 2 inch
  • 1 tsp rice vinegar
  • 1 ½ tbsp soy sauce
  • 2 tbsp sesame paste Chimajyan brand
  • 1 tbsp rayu Japanese chili oil
  • 150 ml water
  • 1 tsp torigara soup granules
  • 150 ml soy milk
Noodle and toppings
  • 1 ramen noodle
  • ¼ pak choy parboiled
  • 20 g pork mince from cooked pork mince, freeze leftover
  • bean sprout optional

Instructions

  1. Make miso pork
  2. Cook the pork mince in a frying pan over medium heat.
  3. When the mince changes colour, add the sake, soy sauce, and tenmenjan.
  4. Cook the mince further until the sauce thickens and all the mince is coated in sauce.
  5. Turn the heat off and set aside.
  6. Make Noodles
  7. Chop the zasai finely and set aside.
  8. Chop the shallots finely and set aside.
  9. Place zasai, shallots, vinegar, soy sauce, sesame paste, rayu in a ramen bowl.
  10. Boil 150ml water in a small saucepan and dissolve the torigara soup granules.
  11. Add soy milk to the saucepan and turn the heat off just before it boils.
  12. Pour the soy milk soup base into the ramen bowl.
  13. Stir all soup ingredients together.
  14. Cook ramen noodle in a separate pot.
  15. Drain the noodle and add it to the ramen bowl.
  16. Top with pork mince, pak choy and bean sprouts.
  17. Garnish with chopped shallots.
