Tantanmen 坦々麺
Description
Tantanmen 坦々麺 begins by browning pork mince then simmering it with sake, soy sauce, and sweet miso paste to create a thick, flavorful meat topping. Separately, the soup base is prepared by combining finely chopped zasai (pickled mustard stems), shallots, rice vinegar, sesame paste, Japanese chili oil (rayu), soy sauce, and water. A granulated torigara chicken soup base is dissolved into boiling water, then soy milk is added and the heat turned off just before boiling.
The broth is poured into the bowl with the other flavoring ingredients and stirred to blend a creamy, slightly spicy soup with umami depth. Fresh ramen noodles are cooked separately, drained, and placed into the bowl. The miso pork mince sits atop the noodles, alongside parboiled pak choy and optionally bean sprouts. Chopped shallots garnish the finished soup, adding a fresh bite.
This dish serves as a comforting meal combining spicy miso, tender pork, and creamy broth with fresh vegetables and noodles. It balances richness and heat with softness from the soy milk and aromatics. Leftover cooked pork mince can be frozen and used again for convenience.
