Tarragon Chicken Salad
Tarragon Chicken Salad combines shredded chicken with crisp vegetables, fresh herbs, raisins, and a creamy mayonnaise dressing. The use of fresh tarragon adds a slightly sweet, anise-like flavor that complements the raisins and herbs. This salad makes a versatile dish for sandwiches, wraps, or served alongside crackers and greens.
Ingredients
- 2 cups chicken shredded
- ¼ cup red onion chopped
- ¼ cup celery chopped
- ⅛ cup tarragon roughly chopped, plus more for garnish, fresh
- ⅛ cup parsley roughly chopped
- ⅓ cup mayonnaise
- ¼ cup raisins
- ⅛ teaspoon black pepper ground
- ¼ teaspoon salt sea salt
Instructions
- Add chicken, red onion, celery, tarragon, parsley, mayo, raisins, pepper and salt into a large bowl.
- Toss to combine. Taste and add more mayo, salt and/or pepper, if needed.
- Enjoy right away or chill before serving. Serve with crackers for a snack or appetizer, on bread or a wrap for a sandwich or over a bed of greens.
- Place salad in an airtight container in the fridge. The salad will keep for 3-5 days.
Notes
- If fresh tarragon is unavailable, use 2 teaspoons of dried tarragon instead of 1/8 cup fresh, adjusting to taste.
