  • 2 cups chicken shredded
  • ¼ cup red onion chopped
  • ¼ cup celery chopped
  • cup tarragon roughly chopped, plus more for garnish, fresh
  • cup parsley roughly chopped
  • cup mayonnaise
  • ¼ cup raisins
  • teaspoon black pepper ground
  • ¼ teaspoon salt sea salt

Instructions

  1. Add chicken, red onion, celery, tarragon, parsley, mayo, raisins, pepper and salt into a large bowl.
  2. Toss to combine. Taste and add more mayo, salt and/or pepper, if needed.
  3. Enjoy right away or chill before serving. Serve with crackers for a snack or appetizer, on bread or a wrap for a sandwich or over a bed of greens.
  4. Place salad in an airtight container in the fridge. The salad will keep for 3-5 days.

Notes

  • If fresh tarragon is unavailable, use 2 teaspoons of dried tarragon instead of 1/8 cup fresh, adjusting to taste.
