Tater Tot Breakfast Casserole

Ingredients

  • 14 cooked and sliced sausage
  • 1 finely diced bell pepper
  • 1 cup finely chopped fresh spinach
  • ¼ cup sliced green onions
  • 1 ½ cups shredded cheddar cheese
  • 10 eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • 65-70 tater tots 1.3 lb approx.
  • ¼ teaspoon seasoning salt

  1. Lightly grease a 9x13-inch baking dish with non-stick spray and preheat the oven to 350 degrees Fahrenheit.
  2. Layer 14 cooked and sliced sausage 1 finely diced bell pepper, 1 cup finely chopped fresh spinach, ¼ cup sliced green onions, and 1 ½ cups shredded cheddar cheese in the baking dish.
  3. In a large bowl, whisk together 10 eggs, 1 cup milk, 1 teaspoon salt, ½ teaspoon dried parsley, and ¼ teaspoon black pepper. Pour the mixture over the vegetables in the baking dish.
  4. Top the eggs and vegetables with rows of 65-70 tater tots to cover the dish and sprinkle with ¼ teaspoon seasoning salt. Bake for 40-45 minutes until the eggs are completely set and tots are golden.
