TATER TOT SAUSAGE BREAKFAST CASSEROLE

Ingredients

  • 1 pound breakfast sausage regular or spicy
  • 1 large onion chopped
  • 1 30 ounce bag frozen tater tots, thawed slightly
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey jack cheese or a Mexican blend
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon dry mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • optional: chopped green onions for garnish

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Cook sausage and onion: In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon, until browned. Add the chopped onion and cook until softened, about 5-7 minutes. Drain any excess grease.
  3. Assemble casserole: In the prepared baking dish, spread half of the thawed tater tots in an even layer. Sprinkle half of the shredded cheddar and Monterey Jack cheese over the tater tots. Top with the cooked sausage and onion mixture. Add the remaining tater tots on top.
  4. Prepare egg mixture: In a large bowl, whisk together the eggs, milk, dry mustard, salt, and pepper. Pour the egg mixture evenly over the casserole.
  5. Add remaining cheese: Sprinkle the remaining shredded cheddar and Monterey Jack cheese over the top of the casserole.
  6. Bake: Bake for 45-55 minutes, or until the tater tots are golden brown and the egg mixture is set.
  7. Garnish and serve: Let the casserole cool slightly before cutting into squares. Garnish with chopped green onions, if desired. Serve warm.
