Instructions
- Preheat oven and prepare pan: Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Cook sausage and onion: In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon, until browned. Add the chopped onion and cook until softened, about 5-7 minutes. Drain any excess grease.
- Assemble casserole: In the prepared baking dish, spread half of the thawed tater tots in an even layer. Sprinkle half of the shredded cheddar and Monterey Jack cheese over the tater tots. Top with the cooked sausage and onion mixture. Add the remaining tater tots on top.
- Prepare egg mixture: In a large bowl, whisk together the eggs, milk, dry mustard, salt, and pepper. Pour the egg mixture evenly over the casserole.
- Add remaining cheese: Sprinkle the remaining shredded cheddar and Monterey Jack cheese over the top of the casserole.
- Bake: Bake for 45-55 minutes, or until the tater tots are golden brown and the egg mixture is set.
- Garnish and serve: Let the casserole cool slightly before cutting into squares. Garnish with chopped green onions, if desired. Serve warm.
Notes
- Variations:
- Tater Tots: Thawing the tater tots slightly helps them to cook more evenly.
- Cheese: You can use any combination of cheeses that you like. Monterey Jack, cheddar, Colby, and pepper jack are all good choices.
- Eggs: Using whole milk in the egg mixture adds richness to the casserole.
- Variations: You can add other ingredients to the casserole, such as bell peppers, mushrooms, or ham.
- Spicy Tater Tot Casserole: Use spicy sausage and add some chopped jalapeños to the casserole.
- Vegetarian Tater Tot Casserole: Omit the sausage and add other vegetables, such as bell peppers, mushrooms, or spinach.
- Cheesy Tater Tot Casserole: Add more cheese to the casserole.
- Overnight Tater Tot Casserole: Prepare the casserole the night before and bake it in the morning. You may need to add a few minutes to the baking time if baking from cold.
- Mini Tater Tot Casseroles: Use a muffin tin to make individual mini tater tot casseroles. This is great for portion control and parties.
