Tender Grilled Chicken Thighs with BEST Marinade

Ingredients

  • 3lb 4oz (1,5 kg) chicken thighs
  • 10.5 oz (300g) Onions (about 3-4 small/medium onions)
  • 9oz (225g) tomatoes
  • 3 tbsp mayonnaise
  • 1 ½ tsp salt
  • ½ tsp pepper or to taste
  • Other herbs and spices (optional) to taste

Instructions

  1. Chop onions into semi circles about 1/4 of an inch thick.
  2. Wash the chicken thighs, dry using a paper towel and add to a bowl.
  3. Add the chopped onions to the bowl. Grate the tomatoes into the bowl. Add the mayonnaise and the spices and mix everything well.
  4. Refrigerate for 12 hours or overnight.
Grilling
  1. Once ready, remove meat and let rest and come to room temperature if possible (for even heat distribution when grilling).
  2. Preheat grill to about 400° F (200° C).
  3. Grill 6-8 minutes per side or until internal temperature reaches 165° F (74° C).
  4. Remove from heat and let rest for a few minutes. Serve.
