Tender Grilled Chicken Thighs with BEST Marinade

Tender and juicy grilled chicken thighs made with an easy and flavorful marinade.

Ingredients
- 3lb 4oz (1,5 kg) chicken thighs
- 10.5 oz (300g) Onions (about 3-4 small/medium onions)
- 9oz (225g) tomatoes
- 3 tbsp mayonnaise
- 1 ½ tsp salt
- ½ tsp pepper or to taste
- Other herbs and spices (optional) to taste
Instructions
- Chop onions into semi circles about 1/4 of an inch thick.
- Wash the chicken thighs, dry using a paper towel and add to a bowl.
- Add the chopped onions to the bowl. Grate the tomatoes into the bowl. Add the mayonnaise and the spices and mix everything well.
- Refrigerate for 12 hours or overnight.
Grilling
- Once ready, remove meat and let rest and come to room temperature if possible (for even heat distribution when grilling).
- Preheat grill to about 400° F (200° C).
- Grill 6-8 minutes per side or until internal temperature reaches 165° F (74° C).
- Remove from heat and let rest for a few minutes. Serve.
