Teriyaki Chicken Burgers

These juicy teriyaki chicken burgers are easy to make and topped with grilled pineapple, charred red bell pepper, and a quick healthy refined sugar-free teriyaki sauce. Air fry or grill the patties for a quick, 20-minute weeknight dinner!

Ingredients

Burgers:
  • 1 lb ground chicken preferably 94% lean
  • 1 large egg
  • ⅓ cup breadcrumbs gluten-free if needed
  • ⅓ cup thinly sliced scallions
  • 2 large garlic cloves minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon low-sodium soy sauce
  • 4-8 slices of pineapple fresh or canned
  • 1 medium red bell pepper de-seeded and cut into rings
  • 4 buns of your choice
  • lettuce leaves
Pineapple Teriyaki Sauce:
  • ¼ cup low-sodium soy sauce or tamari if gluten-free
  • ¼ cup pineapple juice or orange juice
  • 2 tablespoon cold water
  • 2 teaspoon arrowroot starch or cornstarch
  • 1 tablespoon rice vinegar
  • 1 - 2 tablespoon honey
  • ½ teaspoon sesame oil
  • ¾ - 1 teaspoon grated fresh ginger
  • 1 garlic clove minced

Instructions

  1. In a mixing bowl, gently combine the ground chicken, egg, breadcrumbs, scallions, garlic, ginger, and soy sauce. Be careful not to over-mix, or the burgers will get tough.
  2. Divide the mixture into 4 equal portions and shape into patties about ¾-inch thick.
  3. Preheat a grill or grill pan over medium-high heat and coat with non-stick spray. Grill the pineapple rings and red bell pepper slices for 2-3 minutes per side, until tender and lightly caramelized.
  4. Grill the burger patties for 4-5 minutes on each side, until fully cooked.
  5. Meanwhile, make the teriyaki sauce: In a saucepan, combine all sauce ingredients (without heat). Bring to a boil over medium-high heat. Once boiling, reduce to medium-low and simmer for 4-5 minutes, whisking frequently until thickened. Taste and adjust seasoning if needed.
  6. Drizzle olive oil on the buns and toast them cut-side down on the grill or in a pan until golden, watching closely to avoid burning.
  7. Coat each cooked burger with the teriyaki sauce, adding as much as you like.
  8. Assemble the burgers: Place the sauced patty on the toasted buns, top with grilled pineapple, red bell pepper, and lettuce. Enjoy!

Notes

  • Use Fresh Ginger and Garlic: Freshly grated ginger and minced garlic offer the best flavor, enhancing the overall taste of the burgers and sauce.
  • Use Store Bought Teriyaki Sauce: If you are short on time or ingredients, you can use pre-made teriyaki sauce.
  • Air Frying: To air fry your chicken burgers, preheat the air fryer to 375°F (190°C). Lightly coat the patties with cooking spray and place them in the air fryer basket, ensuring they aren’t overcrowded. Cook for 10-12 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C). This method yields juicy burgers with a slightly crisp exterior.
  • Ground Turkey: Ground turkey works well as a substitute. For the best results, I recommend using 94% lean ground turkey.
  • Gluten-Free: To make these chicken teriyaki burgers 100% gluten-free, simply use gluten-free breadcrumbs, tamari sauce (gluten-free soy sauce), and gluten-free buns.
  • Storing: Leftover teriyaki chicken burgers without buns can be stored in airtight containers in the fridge for up to 4 days.
  • Reheating: Reheat in the microwave for 45 – 90 seconds until warm. You can also reheat in the air fryer at 350°F for 4 – 6 minutes until warm. Then prepare the burgers as you please.
