Teriyaki Pineapple Salmon
Give your usual seafood recipe a great twist with this teriyaki pineapple salmon. Fresh pan seared salmon smothered in delicious sweet and tangy sauce topped with caramelized pineapple!

Ingredients
- 2 tbsp vegetable oil
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 2 salmon fillets skin on
- 1/3 cup Teriyaki sauce
- 1/2 tsp ginger powder
- 1/4 cup pineapple juice
- 4 pineapples slices
Instructions
- Heat vegetable oil in a pan. Sprinkle salt and pepper on both sides of salmon fillets.
- Once the pan is hot, place the fillets in the pan, skin side down and sear for 5 minutes until the skin is crispy. Turn the fillets and cook for another 5 - 8 minutes until the fish is fully cooked.
- Mix teriyaki sauce, ginger and pineapple juice in a small sauce pan and bring to boil. Simmer for 3-4 minutes.
- Pour the sauce on the salmon fillets (Save one tbsp) and cook for another two minutes.
- Sear pineapple slices in the remaining sauce until caramelized.
- Serve with white rice and top with caramelized pineapple.

Notes
- To make baked pineapple salmon, preheat the oven to 375°F and line a baking sheet with aluminum foil. Coat with non stick spray, place the salmon pieces on it and set aside. Make the sauce according to the recipe instructions and brush it over the salmon pieces. Bake in the oven for 25 minutes until it's cooked and flaky.
