Teriyaki Shrimp Stir Fry
Teriyaki Shrimp Stir Fry features a colorful mix of bell peppers, carrots, red onion, snap peas, and bean sprouts cooked with large shrimp in a savory teriyaki sauce. Served over sticky rice and garnished with sesame seeds, this dish balances tender shrimp and crisp vegetables with a sweet and tangy glaze.
Ingredients
- 2 teaspoons sesame oil
- 1 red bell pepper , julienned
- 1 yellow bell pepper , julienned
- 1/2 cup carrot chopped
- 1/2 red onion , sliced
- 2 tablespoons seasoned rice vinegar
- 1/2 teaspoon salt fine sea salt
- 1 pound Shrimp peeled and deveined, large
- 1 cup sugar snap peas
- 1 cup bean sprout
- 1 1/2 cups teriyaki sauce , divided
- 1 tablespoon sesame seeds
- 4 cups sticky rice cooked
Instructions
- Heat sesame oil in a large skillet or wok over medium high heat.
- Add red and yellow bell pepper, red onion, carrots, seasoned rice vinegar and fine sea salt. Toss and cook for 2-3 minutes.
- Add shrimp and sugar snap peas, continue to cook for 4-5 minutes or until shrimp are opaque and curled. Add bean sprouts and 1 cup teriyaki sauce, cook for an additional minute.
- Divide cooked sticky rice into 4 bowls. Equally divide teriyaki shrimp stir fry over the rice. Top with remaining 1/2 cup teriyaki sauce and sesame seeds.
