Teriyaki Shrimp Stir Fry
Description
This stir fry begins by sautéing julienned red and yellow bell peppers, carrots, and sliced red onion in sesame oil, imparting a nutty aroma. Seasoned rice vinegar and sea salt brighten the vegetables. Large peeled and deveined shrimp are added along with sugar snap peas, cooking until the shrimp turn opaque and curl. Bean sprouts toss in last to maintain their crunch before the majority of teriyaki sauce is incorporated, coating the ingredients in a flavorful glaze.
The stir fry is served atop cooked sticky rice which soaks up the sauce. Sesame seeds finish the dish with a subtle nutty texture. The dish combines tender seafood and crisp vegetables with a sweet-savory sauce.

Ingredients
- 2 teaspoons sesame oil
- 1 red bell pepper , julienned
- 1 yellow bell pepper , julienned
- 1/2 cup carrot chopped
- 1/2 red onion , sliced
- 2 tablespoons seasoned rice vinegar
- 1/2 teaspoon salt fine sea salt
- 1 pound Shrimp peeled and deveined, large
- 1 cup sugar snap peas
- 1 cup bean sprout
- 1 1/2 cups teriyaki sauce , divided
- 1 tablespoon sesame seeds
- 4 cups sticky rice cooked
Instructions
- Heat sesame oil in a large skillet or wok over medium high heat.
- Add red and yellow bell pepper, red onion, carrots, seasoned rice vinegar and fine sea salt. Toss and cook for 2-3 minutes.
- Add shrimp and sugar snap peas, continue to cook for 4-5 minutes or until shrimp are opaque and curled. Add bean sprouts and 1 cup teriyaki sauce, cook for an additional minute.
- Divide cooked sticky rice into 4 bowls. Equally divide teriyaki shrimp stir fry over the rice. Top with remaining 1/2 cup teriyaki sauce and sesame seeds.
