Tex Mex Chicken Skillet

Ingredients

  • 3 boneless skinless chicken breasts
  • 1 can of diced tomatoes with green chilis
  • ½ can of water
  • 1 tsp cumin
  • 1 tsp chili powder
  • pepper and salt to taste
  • shredded cheese optional

Instructions

  1. Cut the chicken in half lengthwise. That way the chicken is "thinner" -or you could pound them out.
  2. Place in a large skillet and cook over med-high heat.
  3. Wait to flip until it is nice and brown.
  4. Brown the other side. Meanwhile season with chili, cumin, pepper and salt.
  5. Pour in tomatoes and water. Bring to a boil.
  6. Cover and reduce heat. Allow to simmer for 10 minutes.
  7. Serve over rice. Spoon the sauce over the chicken and rice and top with cheese. Delicious!
