Tex-Mex Skillet Recipe

Ingredients

  • 2 -3 Teaspoons olive oil
  • 1/2 cup onion diced
  • 1 lb ground beef turkey or chicken
  • 3 Tablespoons taco seasoning
  • 1 can 14.5 ounce diced tomatoes
  • 2/3 cup water
  • 2 medium sized zucchini diced
  • 1 medium left over corn
  • 2 cups cooked rice
  • mozzarella cheese

Instructions

  1. In a heavy skillet brown meat on medium-high heat in olive oil with onion. Add taco seasoning and 2/3 cups of water and simmer for about 5 minutes. Remove from pan and set aside. Add a teaspoon of olive oil to the pan and sauté the zucchini until it become tender. Put meat back in the skillet and add the can of diced tomatoes. Add cooked rice and corn. Heat throughly. Add cheese.
