Thai Carrot Salad
With julienned carrots in a slightly spicy, peanut sauce, Thai Carrot Salad can go easy with packaged carrot matchsticks or local with yours.
Ingredients
Dressing:
- 2 Tablespoons peanut butter
- 2 Tablespoons olive oil mild
- 1 Tablespoons sesame oil
- 2 Tablespoons lime juice from 1 lime
- 1 Tablespoons soy sauce or Tamari
- 1 teaspoon sugar
- ½ teaspoon ground ginger
- ¼ teaspoon garlic powder
- sriracha optional, to taste, or other hot sauce, dash
- 2 T rice wine vinegar or another vinegar
Salad:
- 10 ounces carrot julienned (1 package or about 4 cups of homemade
- black sesame seeds cilantro or parsley, optional garnish
Instructions
- In a medium-sized, microwave-safe bowl, soften the peanut butter in the microwave. Add the olive oil, whisking until you have a smooth mixture. Add the remaining dressiing ingredients and whisk together until well-blended.
- Mix in the julienned carrots and stir until evenly coated.
- Garnish with chopped cilantro, or black sesame seeds, or other garnish of your choice.
