Thai Carrot Salad

With julienned carrots in a slightly spicy, peanut sauce, Thai Carrot Salad can go easy with packaged carrot matchsticks or local with yours.

Ingredients

Dressing:
  • 2 Tablespoons peanut butter
  • 2 Tablespoons olive oil mild
  • 1 Tablespoons sesame oil
  • 2 Tablespoons lime juice from 1 lime
  • 1 Tablespoons soy sauce or Tamari
  • 1 teaspoon sugar
  • ½ teaspoon ground ginger
  • ¼ teaspoon garlic powder
  • sriracha optional, to taste, or other hot sauce, dash
  • 2 T rice wine vinegar or another vinegar
Salad:
  • 10 ounces carrot julienned (1 package or about 4 cups of homemade
  • black sesame seeds cilantro or parsley, optional garnish

Instructions

    Cup of Yum
  1. In a medium-sized, microwave-safe bowl, soften the peanut butter in the microwave. Add the olive oil, whisking until you have a smooth mixture. Add the remaining dressiing ingredients and whisk together until well-blended.
  2. Mix in the julienned carrots and stir until evenly coated.
  3. Garnish with chopped cilantro, or black sesame seeds, or other garnish of your choice.
