Thai Chicken Pizza

Ingredients

  • My Homemade Pizza Dough Recipe
Peanut Sauce
  • ½ cup peanut butter
  • ½ cup hoisin sauce
  • 2 teaspoons rice vinegar
  • ½ teaspoon crushed red pepper flakes
  • 1 tablespoon freshly grated ginger or 1 teaspoon ground ginger
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 2 cloves garlic minced
  • 2-3 tablespoons water
Toppings
  • 1 cup shredded cooked chicken
  • ¼ cup sliced red onion (or chopped green onion)
  • ⅓ cup shredded carrots
  • 2 cups shredded Mozzarella cheese
  • ¼ cup chopped cilantro
  • 1 cup bean sprouts
  • ¼ cup chopped, dry roasted peanuts

Instructions

  1. Preheat your oven to medium heat (about 425°F). Use store-bought dough or make your own pizza dough with my homemade pizza dough recipe. Divide the dough into 2 or 3 balls, depending on the desired size of your pizzas. Roll out the dough thinly and transfer it to a baking sheet or pizza stone.
  2. In a small bowl, whisk together the peanut butter, hoisin sauce, rice vinegar, crushed red pepper flakes, ginger, brown sugar, sesame oil, garlic, and water.
  3. Use ¼ cup of the sauce as a base for each pizza, and toss the cooked chicken with the remaining sauce. Sprinkle ¾ cup of mozzarella cheese on each pizza crust.
  4. Distribute the chicken and sliced red onions over the pizza, and top with the remaining ¼ cup of cheese.
  5. Bake the pizza for 10-15 minutes until the cheese is melted and bubbly and the crust begins to turn golden brown.
  6. Remove from the oven and sprinkle with bean sprouts, shredded carrots, and chopped cilantro before serving. Add chopped, dry roasted peanuts for an extra crunch.

Notes

  • Yield: Makes enough for 2 medium-size pizzas.
  • Store: Store leftover pizza in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
  • Freeze: Wrap each slice in plastic wrap and then place slices in a freezer-safe bag. Freeze for up to 2 months. To reheat, bake in the oven at 375°F for 20-25 minutes or until heated through.
