Thai Chicken Pizza

This Thai Chicken Pizza features the aromatic flavors Thai red curry paste and coconut milk, tender chicken, kaffir lime leaves and basil, all baked together on pizza dough.

Ingredients

Chicken:
  • 2 chicken breast
  • 2 teaspoon red Thai curry paste
  • 2 tablespoon coconut cream canned
Sauce:
  • 3 tablespoon red Thai curry paste ~45g
  • 6-7 tablespoon coconut cream/coconut milk ~100ml, canned
  • 1 Tbsp + 1 tsp granulated sugar or to taste
Main:
  • 1 batch pizza dough
Toppings:
  • 1 lb mozzarella cheese
  • 2 tomatoes sliced
  • 6 kaffir lime leaves whole or thinly julienned
  • handful Thai basil reserve extra for garnish after baking
  • ¼ C chopped cilantro
  • 1 jalapeno or red Thai chili sliced; if you like it extra spicy

Instructions

Prepare the chicken:

  1. Flatten the chicken and place onto a baking sheet lined with aluminum foil.
  2. In a small bowl, combine the red curry paste and coconut cream until it is incorporated.
  3. Spread the sauce on both sides of the chicken.
  4. Broil at 500°F/260°C on an oven rack set 5-6" from the top for 8-10 minutes per side, or until an instant-read thermometer reaches a temperature of 165°F/74°C at the thickest part of the chicken breast.
  5. Remove from oven and let cool.
  6. Slice chicken into pieces. Set aside for later.
Preheat oven:
  1. Preheat a baking steel or pizza stone on the lowest rack in the oven at 500°F/260°C for at least 1 hour.
Make the sauce:
  1. In a bowl, combine red curry paste, coconut milk and sugar.
  2. Stir until the mixture comes together and give it a taste, adjust the seasoning as needed.
Assemble:
  1. On a lightly floured work surface, stretch out the pizza dough to about 14" in diameter and place onto on a large piece of parchment paper.
  2. Spread the red curry sauce over the surface of the dough.
  3. Add mozzarella cheese, cooked chicken, tomato slices, kaffir lime leaves and basil.
  4. Bake in a preheated 500°F/260°C oven for 6-7 minutes, or until the crust is crisp and the cheese is melty.
  5. Remove from oven, top with cilantro and extra fresh basil, jalapenos/Thai chili (if using), slice and serve.
  6. Repeat with the remaining dough.

  • Yields appx 2 x 14" pizzas
