Thai Cilantro Sauce Recipe

Ingredients

  • 35 g cilantro (see notes)
  • 1-3 green chilies (to taste)
  • 15 g sugar
  • 6 cloves garlic
  • 50 ml water
  • 22.5 ml fish sauce
  • 30 ml fresh lime juice

Instructions

  1. Combine all the ingredients in a food processor or blender and blend until smooth. Taste and adjust the seasoning as needed—add a little extra sugar if it’s too spicy. If using a mortar and pestle, pound the dry ingredients first, then mix in the sauces.
