Thai Coconut Cauliflower

Ingredients

  • 2 cauliflower cut into floret chunks
  • 1 coconut milk can
  • 2 tablespoons fish sauce
  • 2 tablespoons mirin or 2 tablespoons sake with a pinch of sugar, sweet
  • 3 tablespoons coconut shredded
  • red jalapeƱo sliced
  • lime and then cut into chunks for garnish, zest

Instructions

  1. Place cauliflower, coconut milk, fish sauce and sweet mirin in a large saucepan. Bring to a boil, then reduce to medium and cook until coconut milk is reduce by half, about 20 minutes.
  2. Add shredded coconut and cook for an additional 10-15 minutes or until cauliflower is tender.
  3. Garnish with sliced red jalapeno, lime zest, and lime wedges and serve immediately.
