Ingredients

SALAD:
  • 2 English cucumbers sliced
  • ½ cup red onion thinly sliced
  • ½ cup fresh mint chopped
  • ½ cup fresh cilantro chopped
  • 2 green onions thinly sliced
  • ½ cup unsalted peanuts
  • 1 Tablespoon toasted sesame seeds
DRESSING:
  • 2 Tablespoons avocado oil
  • 3 Tablespoons fresh lime juice
  • 2 Tablespoons rice vinegar
  • 1 Tablespoon fish sauce or hoisin sauce whichever you like best
  • 1 teaspoon minced garlic 
  • 2 Tablespoons honey

Instructions

MAKE DRESSING:
    Cup of Yum
  1. Whisk the avocado oil, lime juice, rice vinegar, fish sauce or hoisin sauce, minced garlic, and honey in a small bowl and set aside.
MAKE SALAD:
  1. Toss together the cucumbers, red onion, mint, cilantro, green onions, peanuts, and sesame seeds in a large bowl.
  2. Pour the dressing over the cucumber mixture and garnish with more sesame seeds.
SERVE:
  1. Serve immediately, or you can cover and keep it in the refrigerator for up to 24 hours.
