                                Ingredients
SALAD:
- 2 English cucumbers sliced
 - ½ cup red onion thinly sliced
 - ½ cup fresh mint chopped
 - ½ cup fresh cilantro chopped
 - 2 green onions thinly sliced
 - ½ cup unsalted peanuts
 - 1 Tablespoon toasted sesame seeds
 
DRESSING:
- 2 Tablespoons avocado oil
 - 3 Tablespoons fresh lime juice
 - 2 Tablespoons rice vinegar
 - 1 Tablespoon fish sauce or hoisin sauce whichever you like best
 - 1 teaspoon minced garlic
 - 2 Tablespoons honey
 
Instructions
MAKE DRESSING:
- Whisk the avocado oil, lime juice, rice vinegar, fish sauce or hoisin sauce, minced garlic, and honey in a small bowl and set aside.
 
MAKE SALAD:
- Toss together the cucumbers, red onion, mint, cilantro, green onions, peanuts, and sesame seeds in a large bowl.
 - Pour the dressing over the cucumber mixture and garnish with more sesame seeds.
 
SERVE:
- Serve immediately, or you can cover and keep it in the refrigerator for up to 24 hours.
