Thai Cucumber Salad

This Thai Cucumber Salad is a refreshing addition to any meal. Crisp cucumbers combine perfectly with a tangy sweet dressing to make this vibrant and crunchy side dish.

Ingredients

  • 2 English cucumbers
  • 2 tablespoons fresh cilantro chopped
  • ⅓ cup rice wine vinegar
  • 2 tablespoons water
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt

Instructions

    Cup of Yum
  1. Slice the cucumber in half and remove the seeds down the center.
  2. Slice both whole cucumbers and set aside.
  3. Whisk remaining ingredients in a bowl.
  4. Stir in the cucumbers and place in the refrigerator until ready to serve.
