Thai Curry Grilled Pork Chops

Ingredients

  • 2 teaspoon coconut oil
  • 1 tablespoon Thai red curry paste
  • 2 garlic cloves minced
  • ¼ cup lite coconut milk well-shaken
  • 4 ½-inch thick bone-in pork chops
  • ½ teaspoon kosher salt
  • ½ teaspoon ground pepper
  • juice of ½ lime

Instructions

  1. Heat the coconut oil in a small skillet set over medium heat. Stir in the curry paste and garlic. Cook, stirring, until the mixture starts to darken. Pour in the coconut milk and whisk until smooth.
  2. Season the pork chops on both sides with salt and pepper. Place in a baking dish. Pour the coconut milk mixture over the pork and toss to coat. Let rest for 30 minutes.
  3. Preheat the grill to medium. Light coat the grill with oil.
  4. Place the pork chops on the grill. Cook for 3 minutes on the first side, flip and cook until the pork chops are just cooked through, about 2 minutes. Squeeze the lime juice over the pork chops.
  5. Serve.
