Thai inspired cold spinach soup with steamed zucchini

Easy to make cold spinach soup with steamed zucchini and Thai flavours: garlic, fresh ginger, red chili pepper and lime juice.

Ingredients

  • 1 1 zucchini
  • 4 4 cups spinach preferably baby spinach
  • 3 3 cups water
  • 1 1 lime
  • 1 1 to 2 tbsp ginger grated
  • ¼ ¼ to ½ red chili pepper

Instructions

  1. Cut the zucchini into bite size pieces.
  2. Steam for 5 minutes. Let cool.
  3. Press the garlic, grate the ginger and cut the pepper into small pieces.
  4. Blend the garlic, ginger and red pepper with the water. Add the spinach hand by hand.
  5. Poor into a large bowl and add the zucchini.
