Thai inspired cold spinach soup with steamed zucchini

Easy to make cold spinach soup with steamed zucchini and Thai flavours: garlic, fresh ginger, red chili pepper and lime juice.

Ingredients
- 1 1 zucchini
- 4 4 cups spinach preferably baby spinach
- 3 3 cups water
- 1 1 lime
- 1 1 to 2 tbsp ginger grated
- ¼ ¼ to ½ red chili pepper

Instructions
- Cut the zucchini into bite size pieces.
- Steam for 5 minutes. Let cool.
- Press the garlic, grate the ginger and cut the pepper into small pieces.
- Blend the garlic, ginger and red pepper with the water. Add the spinach hand by hand.
- Poor into a large bowl and add the zucchini.
