Ingredients

  • 18 ounces pork tenderloin or shoulder, bite-sized pieces
  • 4 tablespoons lime juice 2 x 2 tablespoons
  • 1/8 cup water
  • 1 tablespoon white sugar
  • 2 tablespoons fish sauce
  • 1.8 ounce lemongrass sliced thinly
  • 3 kaffir lime leaves sliced into thin strips
  • 3 Chilies to taste
  • 1/3 cup Coriander
  • 1/3 cup mint
  • 1/3 cup green onions

Instructions

  1. Combine pork slices with 2 tablespoons of lime juice in a mixing bowl.
  2. Then, add water to a pot over medium heat. Add the pork and let it simmer until thoroughly cooked.
  3. Transfer the pork slices to a mixing bowl once cooked. Add white sugar, fish sauce, and the remaining lime juice. Mix thoroughly until the meat is well coated with the flavoring ingredients.
  4. Toss the pork with the remaining ingredients and serve immediately.
