Thai Peanut Chicken Naan Pizza

This easy naan pizza recipe is made in under 30 minutes with Thai peanut chicken, red onion, pineapple & mozzarella for a delicious combination of flavors!

Ingredients

  • 2 tbsp Thai Peanut Sauce
  • ½ lb. boneless, skinless chicken breast
  • ½ cup Thai Peanut Sauce
  • 2 pieces Naan
  • ½ cup red onion thinly sliced
  • ½ cup pineapple slices
  • 1 cup mozzarella cheese shredded
  • ½ cup carrots shredded
  • 2 tbsp fresh cilantro chopped
  • 2 tbsp green onions chopped
  • 2 tbsp peanuts crushed
  • 1 lime cut into wedges
Other optional toppings
  • red bell pepper
  • bean sprouts

Instructions

  1. Preheat oven to 400°F.
  2. Spread 2 tbsp peanut sauce on the chicken.
  3. Grill the chicken on a grill pan or indoor grill.
  4. Remove the chicken from the grill and dice.
  5. Spread the remaining ½ cup peanut sauce equally between the two pieces of naan.
  6. Top with the grilled chicken, red onion, pineapple and mozzarella cheese.
  7. Place in the oven for 15 minutes.
  8. Remove from the oven and top with the shredded carrots, green onions, cilantro and peanuts.
  9. Slice and serve with lime wedges on the side for squeezing over the naan pizza.
