The Best Air Fryer Grilled Chicken Nuggets (Pickle-Brined)

These Air Fryer Grilled Chicken Nuggets are awesome for meal prep or just when you need to cook your chicken quick! The secret ingredient is pickle juice which locks in the juices and gives this chicken the most delicious and tasty flavor!

Ingredients

To Marinate:
  • 1 lb. boneless chicken breast cut into 1-inch pieces
  • 1/2 cup pickle juice (120g)
  • 1 tsp brown sugar optional
  • 1/2 tsp black pepper optional
After Marinating:
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika

Instructions

  1. Add chicken, pickle juice, brown sugar and black pepper (if using) to a large bowl or ziploc bag). Toss, place in fridge and marinate for at least 30 minutes (up to 24 hours).  
  2. Remove chicken from the brine and lightly pat dry with a paper towel. Sprinkle all over with the salt and paprika.
  3. Preheat the air fryer to 375°F. Spray air fryer basket with nonstick spray. Add the chicken in a single layer. Spray a little more nonstick spray on top of the chicken. Cook for 8-10 minutes, tossing halfway, or until cooked through (no longer pink when you cut down the middle or when internal temperature has reached 155F*).
  4. Remove chicken from air fryer basket and transfer to a plate or cutting board. Let cool for 5 minutes before slicing. Serve with your favorite dipping sauces and enjoy!

Notes

  • *carryover cooking will ensure your chicken reaches 165°F and prevents overcooking.
  • To grill (indoor or outdoor): Set grill to medium heat (~450°F). Grease grill grates to prevent sticking. Add chicken (you can use kabobs to make this easier). Cook for 3 minutes, then flip, and grill for another 2-3 minutes or until cooked through.
